Citrus Tequila Mahi Mahi

1 lb mahi mahi
2 Lemons
1 Navel Orange
1 tbsp Citrus Salt
2 tbsp Coarse Ground Pepper
1 teaspoon red wine vinegar
1 tbsp oiive oil
Dash of Coriander Powder
1 tbsp Chipotle Chili Powder
2 tbsp tequila
Dash of Dill
6 pods of garlic
1 tbsp butter

1. Squeeze citrus fruit into the marinade container with olive oil, tequila, chili powder, black pepper and red wine vineagar. Marinade Mahi Mahi for 45 minutes shaking to coat evenly every 15 minutes.
2. Transplant mahi into a cooking container with 2″ or higher edges, and evenly coat with citrus salt.
3. pour about 3 tbsp of the marinade into the container so it coats the bottom with a thin layer, chop butter into cubes and lay them and sliced garlic on top of the mahi. Dash with coriander and dill lightly.
4. Cook at 350 until the inside of the mahi is 140 degrees.
